Leith has been the cookery correspondent for The Daily Mail, Sunday Express, and The Guardian. She started a business supplying high-quality business lunches in 1960, which grew to become Leith’s Good Food, the party and event caterer. In 1969, Leith opened Leith’s, her famous Michelin-starred restaurant. In addition, she founded Leiths School of Food and Wine which trains amateur and professional chefs in1975.

It was announced on May 3, 2022, that The Roku Channel would be airing a new season of the show, with Paul Hollywood coming back as judge, along with Prue Leith from GBBO. Roku also stated the plans to air The Great American Baking Show: Celebrity Holiday Edition, featuring celebrities competing to raise money for charity.
